when somebody wants to start this, count me in. it's a great idea and i'm always in search of learning, especially game-dev.

I see the main screen as the bridge con. Controls/Guages for weapons, life support, crew, repairs, engines, cargo, etc. The radar would be used to show your ship in relation to other ships and planetary bodies. Subsequent screens for those listed above to actually interact with those systems. When landing on a palnet, moon, asteroid...the con is the drivers seat of the rover type vehicle/shuttle. A star map allows you to choose targets to hyperspace to. or am I out of my mind and missing the boat?

how would conversation take place between player and crew, player and non crew, crew and non crew, etc...?

I would say build a demo so you can figure out the ships and their configurations and such, and then actually start building the game. so by then you only need to add content, the ships and characters have been balanced and such.
besides, if you start do pegasus first due to limited races. MW is the biggest. after that Ida with a few asgard planets and finally the Ori Galaxy which leads to an entire galaxy of orist people. but also natives who are dilused and dont follow origin..
